What temperature should I separate a screen at?

Warm enough that the adhesive gives without force, and no warmer. Too cool and you end up forcing the panel; too hot and you damage the polariser or the flex. Creep up rather than starting hot.

Is a separator worth it over a heat gun?

For volume screen work, yes. A plate holds a set temperature evenly across the whole panel, where a heat gun gives you a moving hot spot and a lot of guesswork.
