Choose paste melting point by what surrounds the joint, not by habit. 183°C is the standard eutectic default; 138°C and 148°C let you reflow beside a component you must not disturb. Keep track of where low-temperature joints are, because they reflow again any time nearby heat exceeds their melting point.
