Is ten rolls too much for one bench?

Not if you use wick properly. It is a consumable that only works while the flux is fresh, so having plenty means you cut off a tired end rather than fighting it.

How should I store it?

Sealed and away from heat. Flux oxidises on exposure, and oxidised wick simply will not draw solder.
