Is premium wick worth the difference?

On delicate pads, yes. Faster draw means fewer seconds of iron contact, and iron time on a pad is what lifts pads and cooks neighbouring parts.

How does the DW16 differ?

Same wick, individually packed rolls rather than a shared box — better if you want each roll sealed until you use it.

Ten rolls of 2.0 mm by 1.5 m desoldering braid from 2UUL's Solder Vampire line, their premium wick.

What you pay more for in a premium wick is how fast it draws. A braid that lifts the solder in one pass means the iron spends less time on the pad — and time on the pad is what lifts pads and cooks nearby components.
