Why does a repair adhesive need to stay flexible?

Because a rigid joint between a screen and a frame transmits every knock and eventually cracks. A flexible bond absorbs the movement, which is what a dropped phone needs it to do.

How much should I apply?

Less than feels right. Adhesive squeezing out at the seam is visible on the finished phone and has to be cleaned off while wet — a thin even bead holds just as well and looks factory.
