How should I store solder paste?

Refrigerated and sealed, and always brought back to room temperature before you open the jar. Opening a cold jar condenses moisture straight into the paste and ruins it.

Why does the 215°C rating matter?

It sets how much heat the joint needs. Lower melting points let you work beside components you must not disturb; higher ones give a joint that survives later rework nearby. 215°C is chosen for that reason, not by accident.

Can I mix melting points on one board?

You can, but be deliberate. A low-temperature joint reflows again any time nearby heat exceeds its melting point, so keep track of where those joints are.
